Mini Cream Cheese Filled Banana Muffins

Happy (almost) Weekend! I wanted to share this super delicious recipe that comes from one of Ina Garten’s cookbooks, in particular, the Barefoot Contessa- how easy is that? cookbook. This book is a collection of Garten’s easiest and time-saving recipes that are perfect for those with a busy lifestyle. I decided to modify her Old-Fashioned Banana Cake & Cream Cheese Frosting recipe and bake these super cute Mini Cream Cheese Filled Banana Muffins! Check out the recipe below!

Prep Time: 20 mins | Cook Time: 20 mins | Total Time: 40 mins | Servings 25-30 mini muffins 

Ingredients: 

Banana Muffins

  • 3 ripe bananas, mashed
  • 3/4 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1/2 cup vegetable oil
  • 2 extra-large eggs, room temperature
  • 1/2 cup sour cream
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Cream Cheese Frosting

  • 6 ounces cream cheese, room temperature
  • 6 tablespoons (3/4 stick) unsalted butter, room temperature
  • 1 teaspoon pure vanilla extract
  • 2 1/2 cups powdered sugar, sifted

Directions:

Banana Muffins

  1. Preheat the oven to 350 degrees and grease your mini muffin pan
  2. In a bowl, mix the bananas, granulated sugar, and brown sugar on low speed until well combined. Add the oil, eggs, sour cream, and vanilla. Mix until smooth.
  3. In a separate bowl, mix together your flour, baking soda, and salt. Once mixed, add  ingredients to your banana mixture.Mix until combined.
  4. Fill your mini muffin pan(s) with the batter and bake for 20 mins or until golden brown.
  5. Cool in the pan for 15 minutes, remove muffins from pan and place on a wire rack, and cool completely.
  6. Once your muffins are completely cooled, use this muffin filling trick to fill your mini snack with a delicious cream cheese filling!

Cream Cheese Filling

  1. Mix the cream cheese, butter and vanilla in the bowl of an electric hand mixer on low speed until well combined.
  2. Add the sugar and mix until smooth.
